九品莲花酥
一直很喜欢做中式酥皮点心
虽说过程有点小繁琐
不过就是在面团的折折叠叠过程中
却是也能享受到乐趣 一个人的厨房时光

春节嘛 除了准备各种糖果坚果
糕点之类的也是必不可少的了
外面买的点心总是会担心高油高糖
给家里的老人吃了不是很放心的
还是自己做点比较有意思吧

做了款莲花酥
方子也就是一般的酥皮点心的方子了
也可以用来做蛋黄酥栗子酥之类的
过程不复杂稍繁琐的 还有就是每次松弛的时间不可少哈
酥的掉渣的口感值得拥有啊
关键是这一款点心
无论过节是送人还是自家吃都很有面子呢

  • 中筋面粉150克
  • 色拉油60克
  • 白砂糖5克
  • 65克
  • 低粉120克

Steps to make 九品莲花酥

  • 1.将面粉过筛于桌面,筑成粉墙,中间加入色拉油,白砂糖和水和成光滑的油皮面团
  • 2. 油酥的所有原料也同样和成面团
  • 3.将揉好的油皮和油酥面团盖上保鲜膜,室温静置30分钟
  • 4.将静置好的油皮分割成18克一个的小剂子,油酥分割成12克一个
  • 5.取一块水油皮压成圆形,包上油酥
  • 6.用手揉成圆形
  • 7.将圆形的面团擀成牛舌状
  • 8.用手从一端轻轻卷起
  • 9. 全部卷好后盖上保鲜膜静置15分钟
  • 10.再将静置好的面团竖着擀成椭圆形,尽量长一点
  • 11.再卷起
  • 12.盖上保鲜膜静置20分钟。也就是一共擀开两次,卷两次,静置两次
  • 13.将静置好的面团两头捏一在一起,也就是中间折一下,收口朝上,用手掌压成圆形
  • 14.放上红豆馅
  • 15.包好收口朝下,稍稍压扁
  • 16.用剪刀剪九个口,分割成九份
  • 17.然后将每瓣的凉透向中间捏紧即可
  • 18.中间撒上黑芝麻,放入烤盘
  • 19.放入预热180度的烤箱,18-20分钟即可
