Steps to make 椰汁果干蛋糕卷

  • 1.取两个大碗,分离蛋黄和蛋清,装蛋清的碗要保证无水无油;
  • 2.蛋黄中加人橄榄油、椰汁搅拌均匀;筛入低粉切拌至无面粉颗粒;
  • 3.蛋清中加入1/2的糖;
  • 4.启动打蛋器,低速打至蛋白蓬松发白再加入剩下1/2的糖;
  • 5.高速打发至提起打蛋器,蛋白竖起的尖尖不会弯曲;
  • 6.取1/3的蛋白倒入蛋黄糊,轻拌均匀;
  • 7.把拌好的蛋黄糊全部倒入蛋白糊,轻轻切拌均匀,蛋白和蛋黄完全融合;
  • 8.烤盘铺油纸,油纸上铺一层切碎的蔓越莓干和葡萄干;
  • 9.倒入蛋糕糊,抹平;
  • 10.烤箱提前预热,180°烤20分钟;拿出来稍微凉凉按照自己的方式卷起来入冰箱冷藏半小时定型;
