橙汁彩糖小蛋糕
在美天认识的一位姐姐,寄给我很多冰糖橙。真是皮薄肉甜哈!光这么吃有点没意思,于是变着花样的吃。貌似做小蛋糕也很好吃。浓浓的奶香透露着橙汁的香味,无法抗拒的甜点,必须亲自尝尝哦!

  • 冰糖橙汁30克
  • 黄油20克
  • 草鸡蛋3个(约35克一个)
  • 细砂糖20克
  • 炼奶5克
  • 低筋粉40克
  • 彩糖针10克(装饰)

Steps to make 橙汁彩糖小蛋糕

  • 1.冰糖橙从侧面切开
  • 2.用压橙器取新鲜橙汁30克左右。
  • 3.黄油切块放进橙汁用微波炉加热至黄油融化,拿出稍微晾凉。
  • 4.蛋黄碗中用打蛋器将蛋黄打散,加入炼奶搅拌匀。
  • 5.将橙汁和黄油的混合汁缓慢倒入蛋黄液内,边倒边用打蛋器搅拌匀。
  • 6.筛入低筋粉稍微翻拌至没有干粉即可。
  • 7.蛋白盆内放入细砂糖。盆下再放一个50度左右温水盆。
  • 8.将蛋白打发至偏硬性发泡,提起打蛋器蛋白成小尖角。
  • 9.取适量蛋白到蛋黄糊中。
  • 10.利用刮刀,上下翻拌匀
  • 11.将蛋黄糊倒回蛋白盆内。
  • 12.继续用刮刀翻拌均匀。
  • 13.将蛋糊装入保鲜袋或者裱花袋内。尖端剪小口。将蛋糊小心的挤进放了小油纸杯的模具。
  • 14.每个蛋糕挤7-8分满。再洒少许彩色糖针。
  • 15.入烤箱倒数第二层。140度上下火25分钟。
  • 16.烤好的小蛋糕们。
