黑芝麻酱豆沙月饼
最近月饼真是做“嗨”了,300克的脱皮绿豆居然炒出一大盆豆沙来。每种月饼我只做6块,居然还有富余。绞尽脑汁再想个新花样吧,得,就它了,黑芝麻酱豆沙月饼,还别说,歪打正着,还真好吃。

100%的纯黑芝麻酱,不但香气扑鼻,入口也非常香醇。黑芝麻的营养价值也高,富含优质蛋白质、钙、不饱和脂肪酸、维生素E等营养物质。每次不宜多,有10克左右就足够了。

  • 中筋面粉50克
  • 绿豆沙192克(32克*6个)
  • 转化糖浆35克
  • 玉米油12克
  • 枧水1克
  • 黑芝麻酱18克(3克*6个)
  • 表面刷蛋黄液少许

Steps to make 黑芝麻酱豆沙月饼

  • 1.材料准备好:绿豆沙是自制的,做法可在我主页里找“奶香绿豆糕”。
  • 2.黑芝麻酱挤入硅胶冰盒里,每个约重3克。
  • 3.送入冰箱冷冻。
  • 4.玉米油、转化糖浆、枧水同入盆中,用蛋抽搅拌均匀。
  • 5.倒入面粉,用刮刀翻拌均匀,成不软不硬的面团。
  • 6.面团和绿豆沙分别称重揉成球,皮馅比例我按3:7,即皮重15克,绿豆沙重32克,黑芝麻酱重3克。
  • 7.全程操作戴烘焙用手套,卫生又防粘;将豆沙球捏成深一点儿的碗状。
  • 8.冷冻后的黑芝麻酱用小勺挖取,出来后很快就融化了。
  • 9.将黑芝麻酱倒入豆沙“碗”中。
  • 10.包裹严实;避免将空气包入其中;其它几个也要快速包完。
  • 11.将面皮拍扁,豆沙球放在上面,四周向上聚拢,形成一个碗状。
  • 12.四周面皮继续向上推,直到将豆沙球完全包裹住。
  • 13.月饼球裹薄薄一层面粉。
  • 14.50克月饼模具压出月饼生坯,我用的“招财进宝猫”,换成其它图案也可以噢。
  • 15.月饼码放在铺了油布的烤盘上,进烤箱前喷一层雾水。
  • 16.送入预热好的烤箱中层,上下火160度,先烤5分钟;表面刷一层蛋黄液;想要上色深,可用纯蛋黄液,想要上色浅而表面光亮,可在蛋黄液中加一丢丢凉水稀释。
  • 17.送入烤箱180度烤15分钟。
  • 18.黑芝麻酱豆沙月饼,口味醇香,营养又好吃!
