油焖春笋
春笋是一年里最鲜美的笋,有春天的“菜王”之称。

雷笋,细嫩清脆、洁白光润,模样娇羞可爱。毛笋,胖乎乎圆嘟嘟的,个个都有碗口粗。

油焖春笋的做法属经典系列了。我用的是毛笋,非正宗做法。自己喜欢就好 :)

    Steps to make 油焖春笋

    • 1.毛笋买回来拨去外笋壳,削去老根,然后切成细条状;
    • 2.锅里烧开水,放盐,将春笋先焯水2分钟左右;
    • 3.捞出浸泡在清水里5分钟左右,沥干水份备用;
    • 4.锅里热油,倒入春笋翻炒一会儿;
    • 5.调入生抽、老抽、料酒、白糖、蚝油,翻炒均匀;
    • 6.倒入适量的清水,加盖,大火烧开,转中火,待汤汁浓稠,大火收汁即可。
    • 7.出锅前,放入大蒜叶或香葱提香。也可以不放……用五花肉煸出油炒这道菜,也很不错!
