杏仁茶
杏仁茶是由宫廷传入民间的一种风味小吃。《红楼梦》中曾提及,第五十四回中贾母在元宵夜赏焰火放鞭炮时感觉有些饿了,老太太没有选择凤姐精心为她准备的鸭子肉粥和给太太吃斋的枣儿熬的粳米粥,而是挑了清淡的杏仁茶。面对众多美味佳肴,贾母为何偏偏青睐杏仁茶呢?
贾母喝的杏仁茶,是用甜杏仁和糯米制作而成。甜杏仁,俗称南杏,稍有甜味,常做糖果饼干食用,可以润肺养肺、止咳化痰。前面的章节也讲过杏仁是润肺良品。糯米也叫江米,其味甘性温,能够补养人体正气,温补脾胃。吃了糯米后会周身发热,不仅可以御寒,还有滋补的作用。由此可见,贾母选择杏仁茶绝非偶然。

Steps to make 杏仁茶

  • 1.糯米洗净并浸泡3-4小时;杏仁用温水浸泡,搓掉黄皮。
  • 2.杏仁、糯米一并放入料理机中加水200毫升,磨成杏仁米浆。
  • 3.将颗粒较粗的杏仁渣和米渣滤出,备用。
  • 4.冰糖捣碎与杏仁米浆倒入锅中,小火煮制。
  • 5.待冰糖完全融化,调入适量桂花酱。
  • 6.煮至米浆浓稠、顺滑。
  • 7.杏仁茶盛入碗中,撒上黑芝麻、青红丝享用。
