【水晶虾饺】--- 粤式经典茶点
水晶虾饺是粤式经典的茶点之一,是茶楼、酒家的传统美点。在粤式早茶里,讲究“三盅两件”,而其中“两件”里面就少不了一份水晶虾饺。上乘的虾饺,形态美观、不但皮白如雪,而且薄如纸,呈半透明的水晶状态,内馅隐约可见,吃起来口感柔韧、爽滑清鲜、美味诱人,深受海内外食客的赞誉,经久不衰。

  • 料酒1/4汤勺

Steps to make 【水晶虾饺】--- 粤式经典茶点

  • 1.准备好材料
  • 2.虾洗净去头去壳去虾线,取大半部分放入碗中,调入少许盐和料酒,加入拍碎的姜片和葱白段,拌匀腌制片刻。
  • 3.其余小部分的虾仁剁成虾泥放入碗中,再把猪肉剁成肉糜放入碗中。
  • 4.加入少许切成细末的葱姜末,调入少许料酒和盐。
  • 5.用筷子搅拌上劲。
  • 6.加入少许葱花点缀色彩。
  • 7.准备好澄粉。
  • 8.澄粉和淀粉加入较大的碗中,和盐一起拌匀。
  • 9.缓缓加入适量沸水,边加边搅拌,至没有干粉的状态,盖起盖子闷5分钟。
  • 10.加入猪油,和成光滑的面团。
  • 11.把面团揉成长条,切成小剂子。
  • 12.依次把每一份擀成薄面皮。
  • 13.取一块面皮,填入适量虾泥馅,再包入一个虾仁。
  • 14.包好。
  • 15.依次包好后放入垫有胡萝卜片的蒸笼里。
  • 16.入开水锅小火蒸熟即可食用。
