  • 低筋面粉160克
  • 糖粉30克
  • 2克
  • 黄油80克
  • 蛋黄20克
  • 牛奶20克

Steps to make 无花果派

  • 1.低筋粉、糖、盐一起过筛成为混合的粉料
  • 2.黄油切小块倒在粉料上
  • 3.用手轻轻的搓揉,直到粉料与黄油搓成不规则的粉粒
  • 4.蛋黄跟牛奶倒入搓好的粉粒里
  • 5.将干湿材料慢慢混合,注意不要过度搓揉,以免面团出筋,造成烘烤时派皮过度收缩
  • 6.将面团放入袋子里冷藏、松弛至少30分钟以上
  • 7.取松弛好的派皮用擀面杖擀开
  • 8.轻轻的放在烤盘上面
  • 9.压紧,把多余的拿掉
  • 10.用小叉子在上面叉出小眼,以免烤制时膨胀变形
  • 11.派皮上盖上锡纸,上面压上重物,可以是石子也可以是些豆类
  • 12.放入烤箱上火180度,下火190度,15分钟(每个烤箱温度不同,视情况而定)
  • 13.15分钟后拿出
  • 14.上面铺上无花果,放入烤箱同样温度再烤5分钟的样子
