Steps to make 老式面包

  • 1.将酵头原料放在一起混合均匀,放在温暖处发酵至面团膨胀又回落,表面看起来下面似乎有气泡涌动,挑起来听得见气泡破裂的声音,内部呈蜂窝状。
  • 2.将酵头与主面团中黄油外的材料全部混合。
  • 3.搅拌至面筋扩展后,加入黄油。
  • 4.搅拌至扩展阶段,放温暖处发酵至2倍大。
  • 5.将发酵好的面团取出排气,分割成4个小面团。
  • 6.取其中一个搓成长条状,将成长条对折后两端接头处右手按住,左手将面条旋转两周。接头处塞进圆圈里。将做好的面包胚放进抹了黄油的容器中。
  • 7.放温暖湿润处最后发酵。
  • 8.烤箱预热180度,上下火,大约烤25-30分钟,出炉后立刻刷一层融化的黄油即可。
