卤肉饭
卤肉饭,是台湾地区最寻常的庶民食物,普遍的程度可谓有人烟处必有卤肉饭。
卤肉饭在台湾北部人叫:卤肉饭, 卤肉饭用到五层三花的肉丁,有时酱汁里亦会有香菇丁等的成份在内。台湾南部人多说:肉臊饭,而所谓的肉臊饭用的是碎绞肉。
卤肉饭更是浓油赤酱的风格,颜色乌亮诱人,带有厚重口感的卤肉,看似很深但其实不咸,温润柔软的香菇和五花肉搭配在一起,肥而不腻、香浓四溢,配上一碗蒸的不软不硬的白饭,每一粒米都吸透黑红的汤汁。

Steps to make 卤肉饭

  • 1.准备好食材,
  • 2.金钱菇先用清水浸泡一下,捞出漂净切丁待用,浸泡的水沉淀一下可以煮肉。
  • 3.五花肉冷水下锅焯水,去腥味。
  • 4.捞出,切丁,
  • 5.洋葱与胡萝卜洗净切丁。
  • 6.锅中用少许油爆香葱、姜、蒜末,放入五花肉,
  • 7.慢慢煸炒至微上色,逼出多余油脂。 放入适量清水和浸泡香菇的水,
  • 8.加入八角1个,桂皮一小块,放入先抽.盐.糖.
  • 9.放入甜面酱.料酒.胡椒粉.五香粉.
  • 10.放入洋葱,胡萝卜,
  • 11.放入香菇,
  • 12.放入剥去壳的熟鸡蛋,
  • 13.开盖大火烧开后,加盖小火焖炖45分钟左右即可。
  • 14.如果汤水过多,大火收汁,但是不要收干,要留些汤汁浇饭才好吃。
  • 15.把大米饭盛入碗中,码上香菇卤肉,码上卤蛋,浇些卤汁,就可以好好享用了!
