萝卜粄
客家有各种小吃,各种粄,萝卜粄就是其中的一道美食,也是广东人的萝卜糕。是用猪肉(或腊肉)、香菇、虾仁、蒜白做成。可以用来做蒸、煮、煎各种口味的吃法。

  • 五花肉250g
  • 香菇50g
  • 虾仁50g
  • 粘米粉500g
  • 糯米粉50g
  • 鸡精少许

Steps to make 萝卜粄

  • 1.萝卜削皮。
  • 2.刷成丝,放两匙盐,控去水分。
  • 3.备用。
  • 4.准备五花肉,香菇,虾仁,蒜白。
  • 5.全部食材切成粒。
  • 6.起锅热油,先爆香虾仁。
  • 7.在炒香香菇丁。
  • 8.放入猪肉。
  • 9.一直翻炒至肉末变成微黄色。
  • 10.倒入酱油、鱼露、五香粉、胡椒粉、鸡精入味。
  • 11.放入蒜白粒,关火。
  • 12.将蒜白粒拌匀。
  • 13.倒入萝卜丝拌匀。
  • 14.(注意这是关火的状态),放入粘米粉、糯米粉。
  • 15.和的面太干可以适量加点开水,必须是开水。
  • 16.拌成稀泥状即可。
  • 17.准备一个模具。
  • 18.将和成的面糊倒入模具中,摊平。
  • 19.开水入锅蒸,1小时45分钟。
  • 20.盖上锅盖,如果有重物可以往锅盖上压紧。
  • 21.时间到开锅。
  • 22.放凉后脱模。
  • 23.切成块。
  • 24.成品。味道非常香。
  • 25.也可以煎着吃。
  • 26.味道更赞。
