  • 1.鸡爪先浸泡一小时 。
  • 2.剪去脚指,再切成两半 。
  • 3.凉水入锅 ,放入米酒和姜, 焯水五分钟。
  • 4.水开后打去浮沫 。
  • 5.捞出鸡爪 ,沥干水分 。
  • 6.放入油锅中炸 。
  • 7.炸至两面金黄捞起 。
  • 8.放入凉水盆中浸泡40分钟 。
  • 9.泡至表皮起皱纹就可以了 。
  • 10.提前泡好的花生米 。
  • 11.沥干水分后放入油锅中炸 。
  • 12.适当过一下油锅捞出,无需炸至酥脆。
  • 13.把花生米、 姜、 葱 、蒜放入砂锅 。
  • 14.再放入凤爪 。
  • 15.加入所有调料 ,再放入适量的清水 。
  • 16.水开后转小火炖30分钟 。
  • 17.时间到 ,撒点鸡精拌匀出锅 。
  • 18.成品。软烂脱骨,一泯即化,鲜香味美。
