薄如蝉翼——菠菜汁春饼
春饼是中国民间立春饮食风俗之一。一些地区立春有吃春饼的习俗,春饼是用面粉烙制的薄饼,一般卷菜而食,立春吃春饼有喜迎春季,祈盼丰收之意。创意菠菜汁蒸春饼颜色葱绿、薄如蝉翼、筋道韧弹。

Steps to make 薄如蝉翼——菠菜汁春饼

  • 1.面粉中用热水烫1/2,另一半加入1个鸡蛋清(保持筋性)。
  • 2.倒入菠菜汁代替凉水搅成絮状。
  • 3.和成面团,再松驰一下。
  • 4.继续揉搓至光滑面团盖上盖子,饧半小时。
  • 5.取出面团在面案上揉至光滑。
  • 6.分成20个小剂子,揉成圆。
  • 7.调制油酥,油与面调勻。
  • 8.将油酥搅拌均匀。
  • 9.取1个剂子擀成圆皮,均匀刷上油酥。
  • 10.一层饼刷一层油酥,重叠为10张。
  • 11.将饼坯全部做好。
  • 12.将饼坯先压后擀,逐渐擀薄成大饼状。
  • 13.锅中水烧开后,放入春饼坯蒸10分钟(这个颜色正,实际效果)。
  • 14.出锅后将春饼逐一掀开。
  • 15.又薄又透的菠菜春饼,薄如纸张。
  • 16.拍照当中突然从窗户射进一缕阳光,绿色菠菜汁春饼,立刻变成豆绿色了,好漂亮、薄如蝉翼、口感韧弹、用来卷菜美味无穷。
