北方人过年讲究多,除夕饺子初一初二初四初五初七八和初十天天早上吃饺子,整个正月怕是有一半时间都在吃饺子。可吃这么多饺子,仍然挡不住我们对饺子的热爱。晋南人爱吃胡萝卜馅儿的饺子,肥瘦适中的羊肉加入胡萝卜剁成细蓉做成的胡萝卜羊肉饺子,馅香皮美,每年过年姐姐姐夫还没等到“回娘家”那天,就早早打来电话让给留点羊肉馅好回来包饺子。

    Steps to make 【山西】胡萝卜羊肉饺子

    • 1.胡萝卜擦丝,羊肉切细,混合后加入葱姜蒜末,从一个方向到另一个方向不断用刀剁成细蓉
    • 2.胡萝卜擦丝,羊肉切碎,用刀剁饺子馅
    • 3.剁到这种程度后再用刀细细剁七八遍即可,剁好的饺子馅要细腻,有肉不见肉,吃菜不见菜
    • 4.剁好的饺子馅放入冰箱保存,吃的时候加入适量盐、酱油、植物油调味(植物油要多加些,加到馅料能看出明显发亮即可)
    • 5.这是加入植物油后饺子馅发亮的样子,仅供参考
    • 6.取适量面粉,加少量水,和成软硬适中的面团,和好后饧二十分钟
    • 7.取适量饧好的面团,搓成细条,并切成半个核桃大小的剂子
    • 8.案板上撒少量面粉,将面剂子擀成薄片
    • 9.取一个面片,夹入适量肉馅,按压一下
    • 10.将面片从中间捏住,再捏好两侧
    • 11.捏好后用两手虎口夹一下,再次按压使饺子封口严密,并辅助整形
    • 12.饺子做好啦!整整齐齐的!
    • 13.煮饺子,锅中加适量清水,水开后逐个下入饺子。我们那儿煮饺子讲究“滚三滚”,即饺子浮起来后,每次水沸加入半碗冷水,如此三次后饺子便熟了
    • 14.开吃吧!
    • 15.妈妈做的饺子,煮熟后饺子不破,但馅里是有少许汤汁的,非常美味!
