Steps to make 腊鸭腿茄子煲

  • 1.准备好茄子和腊鸭腿。
  • 2.腊鸭腿切成大块。
  • 3.茄子切成小条,用凉水泡一下,捞出沥干水分待用。
  • 4.起锅烧油,小火,下冰糖熬糖色。
  • 5.糖成微黄色时,下入鸭腿块翻炒上色。
  • 6.加入姜片、桂皮、八角、香叶,料酒,转入电高压锅焖20分钟至熟。
  • 7.焖好的鸭腿待用。
  • 8.起锅烧油,油七成热时,下入茄子条和青红辣椒翻炒断生。
  • 9.加入煮好的腊鸭腿,翻炒均匀。
  • 10.加鸡精,蚝油、胡椒粉调味。
  • 11.转入砂锅中,稍煮入味即可。
  • 12.撒上葱花即可。
