10分钟鲜美榨菜肉末面
虽然已是立秋,但天气依然很热,三天两头吃碗捞面条水灵又省事。今天分享一道10分钟快手拌面——榨菜肉末面。

大家常听的是榨菜肉丝面,我之所以没用肉丝,是因为犯懒不想切肉,直接用的肉馅更省事,味道跟放肉丝的没两样,都挺鲜美的。

  • 大蒜6瓣
  • 小葱1把

Steps to make 10分钟鲜美榨菜肉末面

  • 1.中筋面粉加凉水揉成面团;如果用现成的面条,这步和下步可省略。
  • 2.手擀或机压成面条均可。
  • 3.肉馅、咸榨菜、小葱、大蒜准备好。
  • 4.榨菜剥掉外皮中的老筋,先切片,再切丝,用凉水浸泡5分钟,去掉过多的盐分;小葱切末,大蒜切粗丝。
  • 5.热锅凉油,肉馅和蒜丝同入锅,大火翻炒,随着温度的上升,肉馅逐渐变色并被炒成颗粒状。
  • 6.倒适量酱油翻炒上色;不同品牌的酱油咸味和颜色各不相同,根据喜好和口味来选择。
  • 7.榨菜丝入锅翻炒均匀。
  • 8.因为要拌面条,所以加一大碗热水,煮沸即关火,撒一把小葱末混合。
  • 9.另起锅烧水,水开后将面条入锅,煮至无白芯时捞出过凉水。
  • 10.把油菜扔入热面汤中,烫变色捞出过凉水。
  • 11.榨菜肉末面,面条筋道,榨菜清脆爽口,味道好!
