油泼面别名扯面、拽面、抻面、桢条面、香棍面,起源于明朝,是陕西传统的特色面食之一,是一道色香味俱全的汉族小吃,属于秦菜系,口味鲜香。

Steps to make 油泼面

  • 1.油菜和黄豆芽洗净。
  • 2.葱姜蒜切末。
  • 3.碗中倒入适量生抽和醋(可按2:1),加入盐、鸡精搅拌均匀,调成料汁。
  • 4.油菜和豆芽焯水至断生。
  • 5.面条煮熟,过一下凉白开水。
  • 6.面条放入碗中,码上油菜和豆芽,再加入葱姜蒜末、辣椒面,倒入调好的料汁。
  • 7.锅中倒入食用油烧热,均匀泼入碗中。
  • 8.搅拌均匀即可。
