可可海绵裸蛋糕
第一次做裸蛋糕,加了可可粉,味道更加浓郁。水果只用了草莓和蓝莓,真是再简单不过了。虽不完美,但毕竟是自己的裸蛋糕处女秀,心里也美美的!

  • 细砂糖60克
  • 牛奶40克
  • 玉米油30克
  • 可可粉10克
  • 淡奶油250克
  • 细砂糖20克

Steps to make 可可海绵裸蛋糕

  • 1.蛋清、蛋黄分离
  • 2.蛋清打出粗泡时,先放一半细砂糖
  • 3.打出明显纹路,蛋白变细腻时,放入剩下的细砂糖
  • 4.中速打到干性发泡,提起打蛋器头,蛋白呈小直角时,倒入蛋黄
  • 5.继续中速打发一分钟
  • 6.分三次筛入低筋粉,每次都要充分拌匀后再加入下次面粉,一定要轻而快的翻拌
  • 7.牛奶、玉米油、可可粉同入一碗中,充分混合
  • 8.用橡皮刮刀取一些面糊入牛奶可可融液中
  • 9.混合均匀
  • 10.倒回到大盆面糊中,翻拌均匀
  • 11.6寸活底蛋糕模提前在内壁抹黄油,撒一层干面粉,备用
  • 12.蛋糕糊倒入模具中,轻轻震几下,震出里面的大气泡
  • 13.入预热好的烤箱中层,160度,35分钟左右
  • 14.烤好的蛋糕出炉后,再轻震出里面的热气,然后倒扣在晾架上,彻底晾凉后脱模
  • 15.脱模后的蛋糕置于案上
  • 16.平均分成三层
  • 17.草莓清洗干净,沥干水
  • 18.蓝莓清洗干净,沥干水
  • 19.取一部分草莓,一切两半,放在夹心中使用
  • 20.冷藏24小时以上的淡奶油和细砂糖同入盆中
  • 21.中速打发成明显纹路且不易流动状态
  • 22.取适量奶油糊入裱花袋中
  • 23.先在第一层外圈挤一层奶油,再在中间挤一些奶油
  • 24.用抹刀抹平,这样比直接抹上奶油更均匀些
  • 25.随意摆上草莓片及蓝莓
  • 26.再抹上一层奶油糊
  • 27.盖上第二片蛋糕,依次操作,然后再盖上第三片
  • 28.挤上奶油糊,然后随意摆上水果
  • 29.点缀上几片薄荷叶,立马儿增色不少
  • 30.水果不少,真想马上吃上一块呢
  • 31.裸蛋糕处女秀,自己很满意
