香煎红杉鱼
上次用它做过一下“番茄红杉鱼”,想着这时间过长, 没那么冰鲜, 就用湖北的传统“糍粑鱼”的做法,先将其腌制入味,然后沥干(风干)水分,放入锅中煎好用酱油(不要太多,主要是为了让它更入味和上点色)烧煮干,最后加入调味大料煸炒,这样美味的“香煎红杉鱼”就完成了。

看着这香喷喷的干煎鱼,是不是口水直流呢?

Steps to make 香煎红杉鱼

  • 1.将红杉鱼洗净后两面都打上花刀;
  • 2.加入盐, 姜片和料酒腌制十五分钟;
  • 3.再拿起用筷子架起来沥干水分;
  • 4.准备好姜丝,蒜丝,香菜段和红辣椒;
  • 5.烧热锅,倒入适量的油, 下入姜丝, 蒜丝, 辣椒丝一起爆香;
  • 6.将调料扒到两边, 中间放入鱼下去煎(最好还是先将调料拿出来);
  • 7.将鱼两面煎至金黄后, 下入少量的生抽和料酒烧一下;
  • 8.料汁烧干后加入香菜和姜丝等翻炒一下即可;
  • 9.装入盘中,香菜段等码放在鱼表面。
