黄桃草莓裸蛋糕
今天也做了一个时下流行的裸蛋糕,真的是不需要一点裱花技术,戚风做好了做这个就很简单了,每一层都加了满满的水果和奶油,真是让人无法不爱它。此配方是8寸的。

  • 牛奶50G
  • 色拉油50G
  • 细砂糖110G
  • 淡奶油400G
  • 草莓350G
  • 黄桃110G
  • 泡打粉2G
  • 柠檬汁5滴

Steps to make 黄桃草莓裸蛋糕

  • 1.提前准备好材料和工具,锡纸在8寸圆模中用手压出模形后取出,四周多余的剪掉,剪平整,做好4个圆模待用
  • 2.鸡蛋分离蛋白蛋黄,分别放入不同的打蛋盆中,蛋白盆必须保证无水无油
  • 3.蛋黄盆加入20克细砂糖,然后用手动打蛋器打至糖溶化
  • 4.加入牛奶和色拉油,打至油水混合
  • 5.然后筛入低筋面粉和泡打粉,拌匀(泡打粉和低筋面粉一起放入面目筛中筛到蛋黄盆中就可以,泡打粉没有可不加)然后打开烤箱140度上下火预热
  • 6.蛋白加入5滴柠檬汁用电动打蛋器打至粗泡,然后加入50克细砂糖(柠檬汁没有可不加)
  • 7.高速打至湿性发泡,如图轻轻提起打蛋器呈弯曲的角
  • 8.然后转低速打至干性发泡,呈直角
  • 9.打好的蛋白霜用橡皮刮刀挖一大勺到蛋黄盆中,翻拌均匀
  • 10.翻拌好的蛋黄糊倒入到蛋白霜的盆中,翻拌均匀,蛋糕糊就做好了
  • 11.做好的锡纸模放入2个到烤盘,然后各倒入四分之一的蛋糕糊,表面用刮刀稍弄平。放入预热好的烤箱中层上下火140度烤15分钟取出(烤至表面上色就差不多了。可根据烤箱大小来放锡纸模的个数)
  • 12.烤好后取出撕掉锡纸模,倒扣在烤网上晾凉,用同样的方法烤出另两片蛋糕片,放凉待用
  • 13.草莓洗干净沥干水后留几个表面装饰,然后一半切丁,一半切半,黄桃沥干水待用(我用的是200多克的黄桃罐头沥干水后净重是110克)
  • 14.淡奶油加入40克细砂糖用电动打蛋器打至奶油不流动,呈明显纹路状
  • 15.下面开始组合了,蛋糕底托放最下面,然后放一片蛋糕片,抹一层奶油后四周放上切半的草莓,中间放草莓丁,铺一层
  • 16.然后上面再抹一层奶油,表面稍抹平后再加一片蛋糕片
  • 17.蛋糕片上再抹一点奶油,摆上黄桃,黄桃上面再抹一层奶油,再加一片蛋糕片
  • 18.然后再加草莓、抹奶油加蛋糕片,蛋糕片上再抹一层奶油。四片蛋糕全弄好后开始做顶部装饰了
  • 19.裱花袋装入裱花嘴,加入奶油
  • 20.在顶部四周挤一圈花,用的2D6齿花嘴,手拿着边挤边转圈就是一朵花了
  • 21.然后中间再加上水果,筛一点糖粉,四周空的地方可以再挤一点花花上去,插上装饰牌就完工了
