Steps to make 老北京肉饼

  • 1.面粉和成较软的面团,盖盖醒30分钟。
  • 2.肉馅里加入料酒和花椒油去腥,加老抽,生抽,香油,盐,鸡粉调味。葱切成末,最后加入到馅里搅匀。
  • 3.面醒好后分成剂子,擀成大片,从中心处切一刀,把肉馅均匀的抹在面片上,留1/4不要抹。
  • 4.从面片切口没有抹肉馅的的位置开始叠,最后叠成一个三角形,这样肉饼的层次就出来了。
  • 5.边缘的地方要捏死,防止擀的时候肉馅露出来。
  • 6.将饼擀开,两面涂上油。
  • 7.上锅中小火烙成两边金黄即可。
