Steps to make 水煮肉片

  • 1.油菜洗净
  • 2.瘦肉切薄片,放入鸡蛋,少量淀粉拌匀备用
  • 3.锅烧开水,将油菜焯熟
  • 4.捞出,放入大碗中
  • 5.锅中放油,将肉片滑入锅中,炒至变色,捞出
  • 6.锅中放油,将葱姜蒜末倒入锅中,炒出香味,放入郫县豆瓣酱炒制,适量辣椒面(增加辣味),炒出红色后放入鸡精,倒入老汤,烧开
  • 7.肉片下入锅中,煮两分钟
  • 8.将肉倒入装有油菜的大碗中
  • 9.撒上蒜末、花椒面、切好的辣椒段
  • 10.锅中烧热油,淋在铺好的蒜末、花椒面、切好的辣椒段上,完成。(郫县豆瓣酱很咸,所以此菜中没有放盐)
