香酥鸡蛋卷
孩子都爱吃的鸡蛋卷,在家用一口平底锅就可以做,而且我用了核桃油,给孩子吃更放心。没有蛋卷机又想做蛋卷的就试试这个方法吧。

  • 柠檬半个

Steps to make 香酥鸡蛋卷

  • 1.我用的蛋黄量比较大,是3给蛋黄一个全蛋,总量是130克,也可以都用全蛋。鸡蛋和糖放入盆里。
  • 2.倒入核桃油。
  • 3.搅拌均匀加半个柠檬的汁,可以去腥并提高风味。
  • 4.加入低筋粉拌均匀后放入黑芝麻拌均匀。
  • 5.平底锅稍微加热后离火,舀一勺蛋卷糊放入平底锅里,不要放火上,先盖上油纸,用蛋糕模具的活底把蛋卷糊压平压薄。一定要离火压,可以从容的压均匀,不会糊不会沾锅。
  • 6.压平后放入火上,小火慢慢煎烤,待油纸起小泡时把油纸去掉。
  • 7.一面煎好后,翻面继续煎,两面大概煎4--5分钟。一定要小火并不断转动,保证均匀受热。
  • 8.煎好后趁热用筷子卷起来,晾凉就会很酥脆了。
