招财进宝——大珠小珠落玉盘
这次总决赛的题目起的很好,一共四组,灰选的是D组:团团圆圆 、万事如意、步步高升、招财进宝。这道菜是招财进宝——大珠小珠落玉盘,一位论坛里认识的同样喜欢美食喜欢烹饪的朋友帮忙起的名字。我觉得不错,很贴合我的菜。腐衣卷香肠和炸的香酥鸡蛋花,正好是大珠和小珠,配以柠檬摆盘,整体都是黄色调的菜,算是金元宝吧,嘿~~其实海苔应该换成用咸蛋黄的,颜色会更好看,也更好吃。

    灰这次上的4道菜,没有大鱼大肉,都是很家常的材料,做法也很家常,简单的荤素搭配。老百姓家的年夜饭,是符合家人的口味,符合自己的烹饪习惯的。而我家向来以吃素居多,大鱼大肉比较少,所以,这4道菜,灰并没有刻意的去做大鱼大肉,也没有花很长的时间和繁琐的工序来准备一道菜,我只做家人喜欢的,自己心里的那份吉祥年夜饭。

    Steps to make 招财进宝——大珠小珠落玉盘

    • 1.准备材料:豆腐皮、广味香肠、海苔、鸡蛋。
    • 2.将豆腐皮裁去硬边,取一片海苔平铺在豆腐衣上。
    • 3.将香肠铺在海苔上。
    • 4.紧紧的卷起来,用湿淀粉沾边后裹紧。我用了三张豆腐衣卷在外面。
    • 5.开水上锅蒸10分钟左右。
    • 6.将鸡蛋液搅拌均匀。
    • 7.油锅烧热油,将搅匀的蛋液用漏勺中滴入油锅内。(漏勺一定要选择圆孔的,孔不要太大,否则,就成鸡蛋块啦!)
    • 8.蛋液一落入油锅,马上变成了美丽的蛋花,这时候要赶紧用筷子搅拌开来,不然就全粘到一块了。
    • 9.在蛋花炸到浅金黄色时即可控油捞出(为了防止蛋花油腻,一定要多控一会油)
    • 10.将鸡蛋花撒适量糖和芝麻摆在中间,香肠腐衣卷切盘即可。
