腊猪脚炖莲藕
从妈妈家拿了一只猪脚带过来,这是村里面别人自己喂养一年的猪,一般都是过年或是过大事的时候才杀的,这个猪肉才是真正不吃饲料长大的,味道决对好。
老爸怕我这里不好剁,专门用锯子锯成一段段,只留一下猪皮,然后我吃的时候用刀一切就好了。
在家里一般都是用猪脚炖红莲藕,莲藕要吸油才好吃,刚好和油腻的猪脚相配,就这一锅,一家人不吃米饭一餐就干完了。

Steps to make 腊猪脚炖莲藕

  • 1.老家的猪脚,一般都会用火熏一下,再抹上盐挂起来风干,易保存,而且风味也好。
  • 2.猪脚斩小块,焯水去下异味
  • 3.焯水后捞起掉倒多余的水份
  • 4.莲藕切滚刀块,姜和葱、八角准备好
  • 5.热锅温油,爆香八角、姜片和葱段
  • 6.倒入猪脚翻炒入味后加上生抽炒均
  • 7.一次加入适量的水煮开
  • 8.倒入电饭煲中,再放上莲藕和葱段开始炖
  • 9.约一个半钟至莲藕和猪脚酥烂,放盐和蒜苗调味即可
  • 10.起锅趁热吃非常美味,这是家的味道
