家常炒酱
天气一热,人就没胃口,我家餐桌上就会经常出现一道炒酱!里面的配料会经常变化,但是里脊肉、豆干、香菇一般都会有!今天正好有点扇贝肉和虾仁,我就放进去一起炒了!整个一个海陆空大荟萃呀!

Details of ingredients

  • 茭白2个
  • 虾仁10个
  • 扇贝肉6个
  • 里脊肉180g
  • 毛豆籽80g
  • 香菇10个
  • 豆干200g
  • 姜汁2勺
  • 金格勒酱1勺
  • 砂糖2小勺
  • 豆瓣酱1勺
  • 鸡粉少许
  • 香油1小勺
  • 少许
  • 甜面酱2勺
  • 料酒2勺

Steps to make 家常炒酱

  • 1.香菇提前泡发洗净切成小丁
  • 2.茭白去皮洗净切成小丁
  • 3.把茭白丁和毛豆籽焯水捞出备用
  • 4.里脊肉洗净切成小丁
  • 5.用盐、料酒、姜汁和淀粉抓匀腌制一会
  • 6.扇贝肉、虾仁洗净用盐、料酒、姜汁和淀粉抓匀腌制一会
  • 7.起油锅爆香姜末
  • 8.放入里脊肉丁炒至变色盛出备用
  • 9.同样把虾仁扇贝也炒至断生盛出
  • 10.另起油锅
  • 11.先放入豆干、香菇丁煸炒片刻
  • 12.接着放入绰过水的茭白丁和毛豆籽翻炒片刻
  • 13.在锅的中间加入甜面酱、豆瓣酱和金格勒酱(没有就放点辣酱),炒香
  • 14.接着翻炒均匀后加入适量砂糖炒匀
  • 15.加入适量的清水煮
  • 16.等汤汁煮沸后加入炒过的肉丁
  • 17.汤汁变浓稠后加入虾仁和扇贝炒匀
  • 18.尝一下味道看是否需要加盐,淋上香油撒上鸡粉炒匀即可出锅
