  • 鸭腿肉350克
  • 芝麻油3勺
  • 1大块
  • 老抽1勺
  • 米酒4勺
  • 料酒4勺
  • 八角少许
  • 桂皮少许
  • 1/3个
  • 枸杞1勺
  • 5根
  • 1小勺
  • 鸡粉1小勺
  • 白糖1小勺

Steps to make 姜母鸭

  • 1.鸭肉切块,洗净
  • 2.水煮沸,水中加料酒,鸭肉焯水,去腥味
  • 3.鸭肉焯水后捞出待用
  • 4.锅中注入芝麻油,把姜煸香(家里姜不够了,其实还可以再多一些)
  • 5.放入鸭肉翻炒
  • 6.加老抽翻炒
  • 7.加米酒翻炒
  • 8.中火不断翻炒,等酱汁变少时放入八角和桂皮
  • 9.锅中加水,开大火至酱汁沸腾,再转小火焖煮30分钟
  • 10.焖煮后加蒜蓉,翻炒
  • 11.加枸杞,加盐,鸡粉和白糖
  • 12.放入葱段,开始大火收汁,直至收干酱汁(图中还未开始收汁,收汁后鸭肉会上色,味道浓郁)
  • 13.出锅装盘(八角和桂皮可以不用装盘)
