四喜栲麸,是上海很传统很经典的小菜,色酱红,香浓醇。烤麸吸入了香浓的菜汁,咸中带甜,和香菇、木耳、花生米的搭配,更增添了几分营养。

Steps to make 四喜烤麸

  • 1.准备材料。
  • 2.花生米清洗干净,将花生米放到锅里煮10-15分钟,捞出备用。
  • 3. 烤麸泡软,用清水像洗海绵一样边捏边洗。清洗干净切小块。
  • 4.锅中放水加一勺盐,将烤麸煮3分钟。
  • 5.捞出烤麸过凉水,过凉后挤干水分备用。
  • 6.泡发木耳、香菇、黄花菜,将木耳撕成小朵、香菇切块、黄花菜切段
  • 7.锅中放油先将烤麸煎至金黄。盛出备用。
  • 8.葱切段、姜切丝、准备一个八角。
  • 9.另起锅放少量油,小火炒香葱、姜、八角。
  • 10.放入木耳、香菇、黄花菜、煮好的花生翻炒。
  • 11.放入煎好的烤麸一同翻炒,加生抽、料酒、白糖、蚝油、适量的水大火炖煮7分钟,出锅前放香油。
