清蒸华子鱼
华子鱼学名瓦氏雅罗鱼,在内蒙多地都有出产。因达里湖水质是苏打型半咸水,湖水营养丰富,加上华子鱼是耐碱性鱼类,所以这里的出产的华子鱼别具风味,绝非淡水华子鱼(俗称海华子)所能比拟。

Steps to make 清蒸华子鱼

  • 1.将华子鱼放入冷水解冻,化开之后去掉鱼鳞清洗干净控干水分备用。
  • 2.将鱼放入盆子里,加入葱姜丝和花椒。
  • 3.加入一大勺料酒。
  • 4.再加适量盐拌匀腌制30分钟,天热放入冰箱腌制。
  • 5.腌制好的鱼去掉作料控干汤汁,然后放在鱼盘里,表面重新铺一些葱姜丝。
  • 6.放入开水锅盖盖子蒸6分钟。
  • 7.这时准备些葱丝和彩椒丝。
  • 8.鱼蒸好以后倒掉里面的汤汁拣去葱姜。
  • 9.浇上海鲜酱油。
  • 10.撒上葱丝和彩椒丝。
  • 11.用大勺子烧些花椒油。
  • 12.趁热泼在葱丝上即可开吃。
