“咬”春饼
按照北京人的习俗,立春一定要吃春饼,俗称“咬春”。这种传统美食不但将开春的各种时蔬嫩芽尽收饼里,而且还预示着漫长的冬天已经过去,明媚的春光既将到来,倦怠的身心终于可以充分的得到舒展。

  • 面粉200克
  • 热水120克
  • 猪肉500克
  • 甜面酱50克
  • 黄豆酱30克
  • 韩国炸酱50
  • 生抽1勺
  • 白糖50克

Steps to make “咬”春饼

  • 1.将200克面粉,加入120克的开水混合均匀揉成团儿静置三十分钟
  • 2.将猪肉切成丝儿,葱姜蒜切末
  • 3.将50克的甜面酱30克的豆瓣儿酱三十克的韩式炸酱加些清水和淀粉调成酱汁儿
  • 4.锅里加些色拉油
  • 5.低温加肉丝,煸炒
  • 6.炒至肉丝发白炒出油脂,加葱姜蒜炝锅儿
  • 7.将调好的酱倒入炒匀
  • 8.加入些清水,没过肉,熬至汤汁浓稠
  • 9.起锅装盘儿
  • 10.豆芽儿去掉更须洗净,粉条用水泡软。胡萝卜黄瓜小葱香菜切丝
  • 11.起锅煸炒豆芽,胡萝卜,粉丝,加一勺生抽调味儿。
  • 12.将面团儿切成小剂子,两个小挤剂子中间抹点油,压实擀圆。
  • 13.煎至两面金黄

  • 15.开动啦,卷煎饼啦!
