酸辣凉虾
之前去成都旅游的时候,看到凉虾,有没有和我一样第一次听到凉虾以为是真虾的。后来看到才发现就不是小姿老家的蛙鱼吗?凉虾用浆糊煮熟,用漏勺漏入凉水盆中形成,因为头大尾小形状似虾而称之为米凉虾。配上红糖水,玫瑰酱,香甜软嫩,入口冰凉!

在淮北地区尤其是徐州、济宁一带叫“蛙鱼”或者叫“娃娃鱼”~搭配上辣椒、萝卜干、榨菜、香油、花生碎,在配上甜醋,一份咸辣透甜的蛙鱼就做好了!

Steps to make 酸辣凉虾

  • 1.60克豌豆淀粉与150ml水混合搅拌均匀
  • 2.小锅倒入500ml水,煮沸后转小火
  • 3.将豌豆糊倒入,边倒边搅拌
  • 4.边倒边搅拌,全部倒入后小火不停快速搅拌,搅拌至透明状关火
  • 5.把面糊用勺子舀在漏勺上面,在下面放个盆,里面装好凉水,把面糊用蒸笼漏在凉水盆里。
  • 6.漏在凉水盆里的面粉就变成这样子了!
  • 7.蒜切末,再用生抽、香醋、盐、鸡精、糖、辣椒油、香油调一个碗汁,然后淋在凉虾上面搅拌均匀即可
  • 8.凉虾个头均匀,每一颗都牵着小尾巴,滑溜溜的很软和。
  • 9.口感顺滑,清凉适口,大家可以试试看
