  • 1.所有材料准备好,大虾洗干净,粉丝用清水泡软。
  • 2.将大虾去掉下头,然后再去掉下线。(此处教大家一个小窍门,因为虾已经去掉头了,此时下线已经在虾头接口处显露出来了,用手捏住虾线,轻轻一拔就出来了,慢慢拔,不要太用力。)然后将虾身清洗干净,沥干水分,备用。
  • 3.取一只虾,沿背部剖开,然后用刀竖着在剖面上划几刀,注意千万不要把虾肉切断,做这一步,主要是为了防止虾在蒸的时候变形。所有的虾依次处理好,备用。
  • 4.将泡软的粉丝,用剪刀剪成两段,打散,平铺在事前准备好的盘中。
  • 5.将处理好的虾,平铺在粉丝上,摆好造型,第一层摆6个,第二层摆6个,错开。
  • 6.将小米辣切碎,线辣椒切碎,将大蒜切成蒜末,装盘备用。
  • 7.锅中倒入适量的花生油,油温烧至6成热,加入一半切好的蒜末,炸成金黄色,然后关火。
  • 8.立刻放入剩下的另一半蒜末,用余温爆香,用铲子翻炒一下。
  • 9.爆香均匀后,将蒜末油倒入一个干净的碗中。
  • 10.往炸好的蒜末中,加入一勺半酱油,和适量的清水,如果咸度不够的话,可以再加入适量的清水,用筷子搅拌均匀。
  • 11.将做好的蒜香酱汁均匀地浇在摆好盘的虾上。
  • 12.蒸锅中放入适量的清水,将准备好的蒜蓉粉丝虾放于蒸锅中,水烧开后大火蒸5-8分钟即可。
  • 13.蒸好的蒜蓉粉丝蒸虾,出锅后撒上红辣椒和青辣椒作为点缀。
