果粒菠萝酱
果酱继续做起来....上次做的菠萝果酱已所剩不多,今天路过水果摊时又买个大菠萝,买回家就开始做起来,不过这次做的果酱与上次有所不同,之前做的是将菠萝打成酱后熬煮而成;这次则是将菠萝切成小粒来制作,这样吃起来口感更佳,果香味也更浓。这次还添加了麦芽糖,使得熬出来的果酱粘稠度较高,成色也相当漂亮,着眼看去,果肉粒粒晶莹剔透,呈现出琥珀焦糖色,非常诱人食欲!

  • 冰糖碎120g

  • 麦芽糖110g
  • 柠檬汁25g

Steps to make 果粒菠萝酱

  • 1.去皮菠萝一个
  • 2.将菠萝硬芯切除
  • 3.切成大块,用盐水浸泡20分钟
  • 4.将浸泡好的菠萝块切成小粒,放入冰糖碎拌匀后入冰箱冷藏半天或一天
  • 5.腌制好后取出,这时菠萝的水分已经出来许多
  • 6.倒入不粘锅进行炒制
  • 7.大火烧开后放入盐
  • 8.麦芽糖,用锅铲不停的搅拌翻炒
  • 9.炒到接近粘稠状时,放入柠檬汁,转中小火继续熬
  • 10.熬煮到菠萝粒成透明状,颜色为焦糖色,果汁比较浓稠时即可
  • 11.做好的果酱放凉后装入干净的瓶中密封冷藏保存!
