凉拌荞面饸饹
饸饹面是一种面食,指用饸饹床子(做饸饹面的工具,有漏孔)把和好的荞麦面或者高粱面(现多用小麦面)放在饸饹床子里,并坐在杠杆上直接把面挤轧成长条在锅里煮着吃,这种传统独特的饮食制作方式,从很久以前一直延续至今,成为我国北方地区独特的风味名吃。

而蓝田苦荞麦为陕西著名小吃,以苦荞麦粉和成面团制成的饸饹条细,色泽黄亮,棉软筋韧,清香利口。因糖分含量少,粗纤维多,利于消化,对粮尿病有非常明显的疗效。

配上当地人加工的芥末拌来吃,别提有多美味了!

    • 1.主要原料。
    • 2.正宗的蓝田苦荞饸饹是配带着芥末酱一起出售的,如果没有,选用芥末油也可。
    • 3.黄瓜洗净切细丝备用。
    • 4.苦荞饸饹装碗。
    • 5.加入黄瓜丝。
    • 6.根据个人口味加入适量油泼辣子。
    • 7.食盐、香醋加少许凉白开调成汁水
    • 8.倒入苦荞饸饹面中。
    • 9.淋入适量芝麻香油。
    • 10.充分搅拌均匀即可开动!
