西红柿戚风蛋糕
事到临头才发现,原来孟老师的茄红素蛋糕还附有步骤小图,图片上的西红柿汁看起来红艳艳,且略有些浓稠,好像是连果肉打出的汁儿。而自己那压榨出的西红柿汁儿看起来稀薄而且浅淡。再看看孟老师成品图那艳红的蛋糕,忽然意识到用这稀薄的西红柿汁儿估计出不来孟老师那红色儿。早知道就直接打汁儿了,还没那么费事。懒得修正,就这么凑合着用了。
果不出所料,烤好的蛋糕切出来,只有淡淡的粉色,全没有孟老师的那种惊艳。不好意思也叫茄红素蛋糕,好歹也是纯正西红柿打的汁儿,西红柿蛋糕,还算贴切。。。。

  • 蛋黄27克
  • 细砂糖40克
  • 玉米油25克
  • 西红柿汁40克
  • 西红柿糊1大勺
  • 1/8小勺
  • 低筋粉50克
  • 泡打粉1/2小勺
  • 蛋白65克
  • 塔塔粉1/8小勺

Steps to make 西红柿戚风蛋糕

  • 1.用料
  • 2.蛋黄,盐,15克糖倒入碗中
  • 3.搅打均匀
  • 4.加入玉米油,西红柿汁,搅拌均匀
  • 5.倒入西红柿糊
  • 6.搅拌均匀
  • 7.筛入泡打粉和面粉混合物
  • 8.以不规则方向搅拌均匀
  • 9.将塔塔粉与剩下的糖混合,备用
  • 10.蛋白搅打成粗泡,分三次加入塔塔粉与糖的混合物搅打
  • 11.成带小弯勾的9分发状态
  • 12.取三分之一蛋白到蛋黄糊中
  • 13.拌匀
  • 14.加入剩下的蛋白
  • 15.拌匀
  • 16.倒入6寸圆模
  • 17.磕出大泡,震平表面
  • 18.放入烤箱,中下层,上下火140度,烤约40分钟
  • 19.出炉后立即倒扣
  • 20.彻底冷却后翻面
  • 21.脱模
  • 22.切块食用
