南昌风味炒苦瓜
今天就让我带朋友们回归传统,看看南昌传统做法的炒苦瓜吧!这样做出来的苦瓜不但不苦,而且鲜爽可口,不易变质,是老南昌的经典家常菜。

Steps to make 南昌风味炒苦瓜

  • 1.我买的苦瓜是这种的,不是海南苦瓜哈,海南苦瓜不适合这样炒。
  • 2.纵向切开,去掉籽。
  • 3.切薄片,放一小勺盐,拌匀,腌制30分钟。
  • 4.腌制后的苦瓜会出水,挤掉水。
  • 5.洗两遍之后,再用清水浸泡30分钟。
  • 6.再次挤干水。
  • 7.将小米椒切碎和苦瓜放在一起,把豆豉也放上去。
  • 8.炒锅烧热,加50ml油,烧热,倒入苦瓜炒匀。
  • 9.加酱油,炒匀之后,再加一小勺盐和鸡精,将苦瓜炒熟即可。(苦瓜很容熟,只要蔫软了基本就熟了)
  • 10.炒熟的苦瓜不要急着吃,最好是下一餐吃,这样苦瓜更入味,南昌喜欢吃隔餐或隔夜的苦瓜,就是因为比较入味,我拍的这个成品是隔餐拍的,大概在做好了之后四五小时之后吧。
