柠香玛德琳蛋糕
谁是玛德琳?玛德琳蛋糕是一种法国风味的小甜点,又叫贝壳蛋糕。说是在法国的可梅尔西城(commercy)里,一种家庭风味十足的小点心。1730年时美食家波兰王雷古成斯基,当他流亡在梅尔西城时,有一天,他带的私人主厨竟然出餐到甜点时,溜掉不见了,这时有个女仆役临时烤了她的拿手小点心送出去应急,没想到竟然很得雷古成斯基的欢心,于是就将女仆役的名字madeleines用在小点心的名字上,而玛德琳娜(madeleines)也就是贝壳蛋糕的本名。
玛德琳蛋糕,有娇俏的外形和好听的名字,那鼓鼓的小肚子,倔强而可爱,如此简单的小点心却能惹人百般怜爱,里面放了柠檬屑,口感特别清香,烤好趁热立马尝了一下,没忍住一下就两个下肚,这是要长肉的节奏吗?

  • 黄油81g
  • 泡打粉2g

Steps to make 柠香玛德琳蛋糕

  • 1.柠檬表面用少许盐揉搓一会儿,清水冲洗干净后用厨房用纸擦干,用擦丝器擦出细碎末(擦到白色表皮部分换转其它面再擦)也可以把皮刮下来,用刀剁碎
  • 2.黄油隔水加热至融化,备用
  • 3.鸡蛋磕入碗内,直接放入绵白糖搅打均匀
  • 4.柠檬皮屑内倒入蛋糊内,搅拌均匀
  • 5.倒入融化好的黄油,搅拌均匀
  • 6.筛入低粉和泡打粉,搅拌均匀
  • 7.搅拌成蛋糊如丝般滑落
  • 8.盖上保鲜膜,送入冰箱冷藏静置1小时
  • 9.取出,装入裱花袋内
  • 10.挤入玛德琳模中,约八分满,入预热180℃的烤箱,中层,上下火,约10分钟左右(按自家烤箱调整),取出直接脱模。
