家常炸酱面
炸酱面是我妈妈每周六都要做的,老北京炸酱面是北京人人都爱的美食之一,想想炎热的夏天端着一碗刚过了凉水的面,浇上厚厚的炸酱,铺上一层黄瓜丝,再来两瓣大蒜和一瓶啤酒!简直了!今天就给大家介绍的是炸酱面,正宗不正宗我不敢说,但是味道绝对不比海碗居、一碗居逊色!

    Steps to make 家常炸酱面

    • 1.1.五花肉去皮切丁,保证肉肥瘦相间,肉丁指甲盖大小。
    • 2.2.香油热锅,五花肉煸出油,如果怕肥可以多煸一会
    • 3.3.六必居的干黄酱和甜面酱用水化开,面酱和黄酱1:1(黄酱是浓缩的,用水化开会更多;面酱偏甜,有助口感)。
    • 4.4.葱姜切末
    • 5.5.五花肉暂时捞出,葱姜末爆香,下入酱汁用油“炸”,注意翻炒小心沾锅底。
    • 6.6.加入米酒、水、糖、鸡精、耗油少许(酱已经够味道了,应该不用加盐)煮开,放入五花肉,不停搅拌,小火炖煮,注意不要黏锅底
    • 7.7.水收差不多的时候(冒大泡)就可以关火了,这时候酱汁是浓郁能挂在铲子上的。
    • 8.8.黄瓜切丝,还可以配绿豆芽、水萝卜、胡萝卜切丝。
    • 9.9.面条煮熟,一定要过凉水!然后拌上黄瓜和炸酱,最后放上蒜末(或者整头打算哈哈)。一大碗香喷喷的炸酱面就好啦!
