酒香入佳肴---啤酒焖猪蹄

Steps to make 酒香入佳肴---啤酒焖猪蹄

  • 1.将猪蹄洗净,剁开。
  • 2.锅中加入姜片,料酒烧沸,下入猪蹄略煮10分钟捞出。
  • 3.捞出后迅速将猪蹄丢入准备好的凉水中冲洗片刻,使猪手更富有弹性。
  • 4.待猪手凉透,下入六七成热油锅内煎炸。
  • 5.待颜色略变后,转中小火加冰糖炒至上色,加姜片、葱段、八角煸炒出香味儿。
  • 6.加入少量的开水煮至再次沸腾。
  • 7.再加入啤酒,使材料刚刚没及猪蹄。
  • 8.调入2勺酱油、红烧酱油2勺搅匀,将汤汁煮沸。
  • 9.转至砂锅调成小火,加入香葱结慢焖1-1.5小时。
  • 10.待猪蹄软烂后,开盖,转大火收汁。
  • 11.直到汤汁粘稠,关火撒上葱花即可。
  • 12.此菜特点:鲜香酥烂、色泽鲜亮。
