Steps to make 红烧鲳鱼

  • 1.鲳鱼去除内脏洗净。
  • 2.鱼身斜划几刀,两面淋上料酒抹匀盐放上几片姜,腌制一小时入味。
  • 3.葱切段,姜蒜拍松,香叶、花椒、八角、冰糖备用。
  • 4.捡去姜片,吸干水分,抹上少量淀粉。
  • 5.锅内倒入食用油,油烧至六成热,放入鱼炸至两面定型金黄。
  • 6.另起一平底锅,倒入少量食用油,放入葱、姜、蒜、花椒、八角、辣椒、香叶翻炒几下。
  • 7.倒入鱼加水没过鱼,放入冰糖、生抽、老抽、醋、料酒,大火烧开。
  • 8.转中小火炖制5分钟,翻到另一面再炖5分钟,大火收汁。
  • 9.装入盘中。
