金玉满堂 金沙玉米元宝虾
这是俺参加美食家年度总决赛的第三道菜——金玉满堂!

    这道金沙玉米元宝虾,取的是原料中的同音,金即为金沙,也就是咸蛋黄泥,玉为玉米,在北方人尤其是东北人的习俗里,过年的时候有一道玉米或者其它杂粮做成的菜式,寓意着五谷丰登,米粮满仓!

    金沙玉米其实是新派川菜中常见的菜式,为了不显单调,我又加了酥皮凤尾虾做摆盘,造型类似元宝,也取一点财喜的寓意,同是咸鲜香酥的口感,却又因为加入了虾的鲜美和外酥里嫩,使这道菜在味觉和视觉上更有层次。

  • 玉米粒250克
  • 咸蛋黄3个
  • 基围虾12只
  • 鸡蛋1个
  • 淀粉30克

Steps to make 金玉满堂 金沙玉米元宝虾

  • 1.玉米粒洗净滤干水分备用。
  • 2.咸蛋煮熟取其黄,加少量油、鸡精、淀粉碾合成泥。
  • 3.基围虾去头抽虾线,留其尾。
  • 4.鸡蛋一个打散加入两大勺淀粉,适量盐、鸡精调匀成蛋糊
  • 5.将虾肉下入蛋糊中挂浆,注意尾部不要挂
  • 6.再将挂好浆的虾肉放入面包糠中均匀的裹上一层面包糠
  • 7.将裹好粉的虾肉下入六成热的油中炸至金黄色后捞起。
  • 8.整齐的在盘子周边摆上一圈。
  • 9.重新开火,油温八成热时下入玉米炸至表皮带酥时捞起。
  • 10.炒锅倒少量油,小火烧热,下入咸蛋黄泥,加少量水,炒成金沙。
  • 11.下入玉米粒翻炒均匀,使玉米均匀的包裹上金沙。
  • 12.最后将金沙玉米装入盘中,表面撒上葱末即可。
