想吃元宵不用买,教你做东北风味的炸元宵,做法简单,比买的还好吃,外焦里糯,香而不腻,元宵节吃“元宵”象征阖家团圆,新的一年幸福安康、万事如意!

Steps to make 炸元宵

  • 1.这是乡下亲戚送来的糯玉米粉,东北农村家家户户过年都会蒸粘豆包,粘豆包的面粉可以是大黄米面,也可以是糯玉米面,还可以是糯米粉,我今天用的是糯玉米面粉,磨粉之前经过几天的浸泡,发酵后才磨粉,这种面粉无论做什么都不需要再发酵了,平时都是冷冻保存的,提前取出解冻,小疙瘩化开即可使用。
  • 2.和面,这种面粉需要烫面,加入适量的开水搅拌成絮状,冷却后后揉成面团即可使用,不用饧面。
  • 3.元宵馅是之前就准备好的自制莲蓉馅和买现成玫瑰豆沙馅,我还是喜欢自制的莲蓉馅,玫瑰豆沙馅虽然很香,但是太甜了,所以有时间还是自己动手做吧。
  • 4.取一小块面团,包上准备好的玫瑰豆沙馅,元宵大小随个人喜欢。我做的莲蓉馅略大一点,便于区分玫瑰豆沙馅。
  • 5.用手这样挤压,去掉多余的面皮,尽量薄皮大馅,包好后团圆至光滑。
  • 6.同样的方法做好所有的元宵,计划吃多少包多少,我包了10个,2人份。
  • 7.锅中加入适量的油,油温6成热即可下锅了,下锅前将元宵生坯再团一团,团至光滑入锅,中小火慢炸。
  • 8.炸熟炸透,炸至表面金黄,元宵鼓起甚至裂开就可以捞出来控油。
  • 9.出锅装盘。
