  • 1.准备好一块巴沙鱼。
  • 2.切成大块。
  • 3.加鸡蛋、淀粉、料酒抓匀。
  • 4.起锅烧油,油稍宽,油七成热时。
  • 5.下入鱼块炸香。
  • 6.捞出。
  • 7.锅中油再次烧热,下入鱼块再复炸一分钟。
  • 8.捞出沥干油。
  • 9.辣椒斜切、姜切成丝、大蒜头切成末。
  • 10.起锅烧油,小火,下入豆瓣酱煸出红油。
  • 11.下入炸好的鱼块。
  • 12.加少许水,加鸡精、蚝油、胡椒粉、米酒、醋调味翻炒均匀,加入蒜苗。
  • 13.起锅装盘。
