蒜香青口贝
青口贝,学名叫贻贝;南方叫青口,在渤海地区及北方又称其海虹,干制后则为淡菜。肉质鲜嫩,味道甘美,营养丰富;可蒸、可煮,也可剥壳取肉与和其它食材小炒,为平民化的海鲜品种。它富含蛋白质和人体生命活动所必需的各种氨基酸、不饱和脂肪酸、无机元素等多种营养物质, 其中牛磺酸、DHA 和硒等生物活性物质,可利尿消肿、补肾壮阳、能软化和保护血管,有降血脂和胆固醇的作用,对机体更具有抗病、解毒、增强免疫力等功效。今儿我用了最简单的方法来烹饪它,做好的青口贝蒜香浓郁,鲜嫩味美,简单又好吃~

  • 青杭椒1个
  • 红杭椒1个
  • 蒜头1个
  • 葱姜少许
  • 米醋3汤匙
  • 又伊鲜汁2汤匙

Steps to make 蒜香青口贝

  • 1.备好食材
  • 2.将青口贝倒入盆中,加少许食盐和清水浸泡1~2小时,让其吐出壳内泥沙
  • 3.刷去贝壳表面海草杂物,贝壳旁的须状物用剪刀剪去即可,千万不可用力拉拽,这样不但拽不来反而会拽死或损伤里面贝肉
  • 4.锅中加入姜片、青口贝和冷水
  • 5.大火煮至青口贝全部开口后,再煮1分钟左右熟透即可
  • 6.取出青口贝拔出足丝,再将贝壳对半剪开后摆入盘中
  • 7.趁浸泡青口贝的时间来准备蘸料:葱姜与青、红杭椒洗净切碎
  • 8.大蒜瓣去皮洗净后切沫
  • 9.将青红椒碎丁和部分蒜蓉等放入小碗中,余下蒜蓉放另一盘中,如图
  • 10.接着在小碗中调入3汤匙米醋
  • 11.再调入2汤匙酱油拌匀备用,没有又伊鲜换成生抽、味极鲜等也可以
  • 12.锅中倒入食用油和预留的蒜蓉,开小火炒出蒜的香味
  • 13.再趁热淋入辣椒碗中拌匀,美味的蒜蓉蘸料就做好了
  • 14.最后再将蒜蓉蘸料淋在青贝口上即可
  • 15.蒜香浓郁、鲜嫩味美
  • 16.连肉带汁、一口一个真的好过瘾
