虽然,还并没有到农历八月,但是大家对于月饼的热情和上海的气温一样持续高烧不退。老字号的新雅就不说了,去了几次都是人满为患(奇怪的是一直只做最最中规中矩传统广式月饼的新雅今年也开始做酥皮鲜肉哈哈哈),什么东区老大房西区老大房静安面包房王家沙沈大成……反正只要是看上去做糕团点心的,都是卯足了劲儿要凑月饼这个热闹了,也不知道今年会炒作出来个什么诡异的网红月饼……
已经被催了无数多次要出个月饼的菜谱了,像我这种即便是老早做好分好送人的人还是不大愿意这么早早就吊起群众的胃口,毕竟时间还长着呢嘛,于是就变成了——每年都还没把所有的更新上去呢,中秋节就过去了……
好吧,今年我也就早点更新,诸位看官口水不要流下太多哦!

  • 面粉165g
  • 转化糖浆116g
  • 花生油50g
  • 枧水4g
  • 翡翠莲蓉馅250g
  • 蔓越莓干50g

  • 时间一小时

Steps to make 蔓越莓莲蓉广式月饼

  • 1.找一个干净的碗,加入116g转化糖浆
  • 2.加入4g枧水和50g花生油,使劲搅拌到完全融合
  • 3.筛入165g低筋面粉,揉成面团之后静置1小时
  • 4.蔓越莓干切成非常细碎的小颗粒
  • 5.然后和翡翠莲蓉柔道均匀混合
  • 6.面团分成10g的小剂子,馅料分成40g的小剂子
  • 7.慢慢用面团包住馅料,并揉圆
  • 8.放到模具里面,压出花型
  • 9.摆到烤盘里面,表面喷上一层水
  • 10.烤箱预热好,上下火中间层175度先烘烤10分钟定型
  • 11.一个蛋黄加1大勺清水,混合均匀之后涂在月饼表面
  • 12.继续上下火中间层,15分钟即可!
