返沙香芋
“返沙”是潮州菜中的一种烹调方法,简单说就是先把白糖加热融成糖浆,再把经过炸熟的原料倒入糖浆中,待其冷却凝固,糖浆会变成一层白霜般包在原料的外层。因为我们潮洲人习惯把白糖称为沙糖,返沙是把沙糖融为糖浆,经冷却后又成为固体的糖粉,故返沙有“返回”恢复沙糖原状之意。

Steps to make 返沙香芋

  • 1.把芋头去皮洗净、去皮,切成大小均匀的寸段,香菜、葱白、桔子皮分别切小碎。
  • 2.切好的芋头飞水,捞干。(不飞水也行)下油锅用中小火炸熟待用。
  • 3.炒锅洗净(一定要洗得得干净),放下水和白糖、白醋(比例约2:4:0.5)。
  • 4.使用中火,用手勺不停地搅拌,一直搅到糖浆表面浮起大泡。
  • 5.离火,把炸熟的芋段和配料倒入糖浆中,用手铲轻快地翻铲。(夏天还得对着原料吹风,现在是冬天就不用。)
  • 6.糖浆在芋段外层地凝结一层白霜般的糖粉,这样就可以装碟上菜了!
