杏干腊肉月饼

  • 腊肉215克
  • 芝麻20克
  • 杏干30克
  • 低筋粉160克
  • 转化糖浆125克

  • 碱水2克

Steps to make 杏干腊肉月饼

  • 1.馅料:红豆沙馅70克,冬瓜蓉165克,腊肉215克,芝麻20克,杏干30克。饼皮:低筋粉160克,转化糖浆125克,花生油45克,碱水2克。
  • 2.杏干切成碎丁。
  • 3.腊肉去皮,切成绿豆大小的丁。
  • 4.将腊肉,杏干,芝麻倒入大碗,混合均匀。
  • 5.放入红豆沙馅,冬瓜蓉充分抓匀。
  • 6.成均匀团状。
  • 7.分割成16等分,备用。
  • 8.饼皮:低筋粉160克,转化糖浆125克,花生油45克,碱水2克。
  • 9.将碱水倒入转化糖浆,搅拌均匀。
  • 10.加入油,搅拌均匀。
  • 11.倒入面粉。
  • 12.拌成均匀面团,包上保鲜膜,松弛半小时。
  • 13.分割成16等分。
  • 14.取一块饼皮,按扁,放入馅料。
  • 15.将饼皮向上推起,包好,收口。
  • 16.逐个做好,搓圆。
  • 17.放入撒粉的模具中。
  • 18.扣在案台上,向下压实。
  • 19.提起模具,轻轻脱模。
  • 20.摆入烤盘中,表面喷水,放入预热好的烤箱,中层,上火200度,下火170度,烤约5分钟,
  • 21.定型后取出,表面刷蛋液。再次放回烤箱中,烤约15分钟左右。
  • 22.表面金黄,出炉。
