冰皮红糖雪豆月饼

Steps to make 冰皮红糖雪豆月饼

  • 1.雪豆浸泡一晚。泡发。用高压锅煮压20分钟后煮熟捞出
  • 2.趁热碾碎,很容易就碾得细腻。
  • 3.加入红糖拌匀。
  • 4.不粘锅烤盘倒入玉米油,开小火,倒入放好糖的雪豆泥翻炒,炒几分钟后,倒入椰蓉。
  • 5.炒匀,炒干即可。不要太干,要能揉成团
  • 6.做冰皮。 玉米油加牛奶加白糖搅拌均匀,(要使糖都融化。)倒入混合好糯米粉,粘米粉和澄粉的盆中,搅拌均匀,无颗粒。
  • 7.盖上保鲜膜入蒸锅,开锅后蒸20分钟。
  • 8.出锅搅拌顺滑,晾凉。
  • 9.皮和馅都分成约25g左右的小圆球。
  • 10.把皮按压薄片,包入雪豆馅,用手虎口慢慢收口,收严。
  • 11.团好的月饼球放入事先炒熟的糯米粉中,滚上一层粉
  • 12.放入50g月饼模具,用月饼模具压成形即可。
