Steps to make 8寸戚风蛋糕

  • 1.鸡蛋分离在两个无油无水的容器中。
  • 2.不小心1个蛋黄散了。
  • 3.打散鸡蛋黄,加入玉米油搅拌均匀。
  • 4.加入牛奶搅拌均匀。
  • 5.筛入低筋面粉与云玉米淀粉的混合粉搅拌均匀。
  • 6.蛋黄糊制作完成。
  • 7.鸡蛋白打至细泡状分两次加入白糖,每次加45g继续搅打。
  • 8.打至粘稠状第二次加入45g白糖。
  • 9.取1/3蛋白霜加入至蛋黄糊中翻拌均匀。
  • 10.再取1/3蛋白霜加入至蛋黄糊中翻拌均匀。
  • 11.翻拌均匀后准备倒入蛋白盆中。
  • 12.将蛋黄糊倒入蛋白盆中。
  • 13.蛋糕糊制作完成。
  • 14.倒入至8寸模具中震出气泡。
  • 15.烤箱先预热10分钟,上火170度,下火160度烤30分钟。
  • 16.中途视情况而定,覆盖油纸防焦。
  • 17.8寸蛋糕新鲜出炉,不塌不陷,柔软又膨松。
