红烧排骨

  • 排骨1000克
  • 花椒10几粒
  • 八角1个
  • 香叶3片
  • 桂皮1小段
  • 干红辣椒2个
  • 干山楂5片
  • 草果1个
  • 老姜5块
  • 冰糖20克
  • 生抽2勺
  • 老抽2勺
  • 1大勺
  • 陈醋2勺

Steps to make 红烧排骨

  • 1.准备好干香料。
  • 2.排骨焯水去血沫子后捞出备用。
  • 3.锅底多放些植物油,冷油放入冰糖,开小火翻炒冰糖。
  • 4.冰糖炒至融化,呈焦糖色。炒冰糖时需要注意,如果冰糖炒过头了味道会发苦,如果冰糖炒的时间不足,放入肉以后冰糖又会结块。
  • 5.冰糖呈焦糖色后马上倒入排骨翻炒。
  • 6.将排骨翻炒2-3分钟以后倒入所有干香料翻炒2分钟,炒出香料的香味。喜欢辣的话可以放少许干红辣椒,也可以不用放辣椒。
  • 7.加入生抽和老抽翻炒片刻上色。
  • 8.加入适量开水小火煮40分钟左右,出锅前20分钟加盐,10分钟前加陈醋。加入陈醋会让排骨变得更香而且吃起来不会腻!
  • 9.出锅前一块块挑出排骨,将调料过滤掉,将过滤后的汤汁浇一些在排骨上就可以啦!
